Shin Tsuchida Princess Sarlly is brewed with the rice called Princess Sarlly, a medium-to-long-grain rice derived from Basmati rice, known as “aromatic rice” or “jasmine rice.” The focus was on capturing the rice’s unique roasted aroma, reminiscent of edamame or popcorn, in sake.

Through experimentation, it became clear that long-grain rice can indeed produce quality sake without losing its Japanese character. This year, using the Shin Tsuchida method, low-polish, natural brewing techniques were applied to Princess Sarlly, resulting in sake with lightness, balanced sweetness, and acidity, ideal for pairing with spicy and Western dishes.
