Tsuchida Shuzo is based in Kawaba Village, Gunma Prefecture, a small village with a population of only 3,100. Founded in 1907, the brewery is currently headed by the 6th generation head of the family. The brewery produces sake using the "kimoto" method, which utilizes bacteria and microorganisms that were common in the Edo period (1603-1868). Thier goal is to create sake that shares the taste, enjoyment, and pleasure with all those involved. In the past few years, they have also been focusing on not grinding the rice as much as possible by using eating rice. This practice would help them to reduce the energy consumption which they used to use to polish sake rice.
