Brewed by Hidehiko Matsumoto of Nichi Nichi in Fushimi, Kyoto, this sake uses Akita Sake Komachi rice grown in Yuzawa, Akita, through a collaboration with Aramasa Sake Brewery.

Expect a clean, superbly crisp and ultra-dry profile. Bright acidity leads, cutting through the palate with clarity. As it opens, there’s a subtle smoky note that reveals itself only to attentive taste—never overpowering, but adding depth. The finish is very smooth; although the alcohol is not felt heavily, the texture lingers, compelling you to take another sip.
