From two small, high-altitude paddies blessed with outstanding sunlight and ventilation, the rice is cultivated entirely by hand—planted, cared for, and harvested by Hidehiko. This personal stewardship allows the rice to fully express its natural elegance and strength.
Brewed with precision in Fushimi, Kyoto, the sake reveals a crystalline purity layered with gentle notes of citrus and muskmelon. At just 11% ABV, it remains light and graceful on the palate, yet unfolds with remarkable depth and structure.
Only a small number of bottles are produced each year.
