Nichi Nichi Homase is brewed by Hidehiko Matsumoto in Kyoto using Homase rice, a rare heritage variety originally cultivated along the Kikuchi River in Kumamoto during the Edo period and revived from preserved seed stocks. This sake reflects Nichi Nichi’s commitment to expressing rice and terroir at their purest.

Brewed with the traditional Kimoto method, Homase offers gentle depth and a naturally structured character. On the palate, it is light yet defined, with crisp acidity, restrained sweetness, and a smooth, lingering finish. At 11% ABV, it is remarkably easy to drink, with a subtle aromatic lift and faint hints of natural earthiness that set it apart.

Elegant and versatile, Nichi Nichi Homase pairs beautifully with delicate dishes such as sashimi, lightly grilled fish, or seasonal vegetables. It is a sake that invites reflection—quiet, balanced, and distinctly crafted to honor the legacy of one of Japan’s oldest rice varieties.
