Nichi Nichi Aiyama is a limited-edition sake brewed with exceptional Aiyama rice from Sadamori in Tōjō, Hyogo Prefecture—an area famed for its rich soil and premium rice. Crafted in Fushimi, Kyoto by Nichinichi Brewing, it reflects the brewery’s commitment to purity, elegance, and restraint.

With an alcohol content of just 11% from the 4th brewing season, this undiluted genshu offers a delicate yet expressive profile. Rather than relying on sweetness or bold aromatics, Nichi Nichi lets the rice shine—revealing its full character through pristine water and precise brewing.

The aroma is gentle and refined, with subtle notes of banana, citrus, and a hint of mocha. On the palate, a natural effervescence gives way to a smooth texture, layered umami, and mellow sweetness, lifted by juicy acidity. Despite its low alcohol, it delivers depth, clarity, and a clean, refreshing finish.

Designed to be enjoyed throughout a meal, Nichi Nichi Aiyama reinterprets the richness of Aiyama rice with a fresh, vibrant touch. Elegant, nuanced, and highly drinkable, it embodies the harmony of terroir, technique, and innovation in every sip.
