“Mikumo” (幾望) translates to “countless hopes” or “many aspirations.” It reflects Koueigiku’s philosophy of continually looking forward—embracing new possibilities while remaining deeply rooted in traditional craftsmanship.
Unlike many of Koueigiku’s vibrant seasonal nama releases, Mikumo presents a calmer, more elegant expression of the brewery. It showcases the signature Koueigiku balance of lively acidity and gentle sweetness, but with greater refinement, allowing the purity of the rice and water to take centre stage.
The aroma opens with delicate notes of Strawberries, white peach, Asian pear, fresh melon and white flowers. On the palate, soft fruit sweetness is immediately lifted by bright, refreshing acidity that has become Koueigiku’s hallmark. The texture is silky and smooth, gradually revealing subtle hints of citrus zest and fresh herbs before finishing exceptionally clean with a lingering mineral freshness.
This is a sake that feels effortlessly drinkable while maintaining remarkable complexity. Each sip invites another, making Mikumo equally enjoyable as a contemplative glass or throughout an entire meal.
As with many expressions from Koueigiku, the balance between sweetness, acidity and umami is carefully crafted to create freshness rather than heaviness, making it exceptionally food-friendly.
