This “Mizumoto Junmai” sake, awarded the Platinum at the 2023 Milano Sake Challenge, uses the traditional Mizumoto method dating back to the Muromachi era. It is crafted naturally, with no added lactic acid or yeast, relying on the brewery’s native yeast. Low-temperature fermentation and the white-koji enzyme technique produce a refined, clear quality. The premium Hyogo Aiyama rice enhances elegance and depth. The sake is low-alcohol, with a harmonious balance of sweetness and acidity, resulting in a refreshing, light, yet subtly rich flavor, accompanied by gentle, natural aromas that appeal to both beginners and connoisseurs.
