This water, boasting a unique mineral balance with a high hardness level of 150-160 mg/L, sets the stage for our distinctive sake production. Kikkawa Brewery stands out for its "low-pasteurized" sake and unconventional rice polishing ratio of 90%. This approach preserves the sake's character while ensuring exceptional quality.
