This sake is crafted using traditional pressing methods with reclaimed pillars and beams from a 200-year-old house, and a press repaired from an Edo-era brewery tool. Made from healthy rice grown on fertile soil, every grain is fully utilized, combining the wisdom of our predecessors with the skill of our artisans. It offers a sharp, refreshing acidity and gentle sweetness, with notes of grapefruit and citrus, and a subtle hint of rice bran in the finish. The overall impression is reminiscent of a young white wine, reflecting a harmonious balance between nature and human craftsmanship.
