Yamagata Masamune is a sake brand produced by Mitobe Shuzo in Tendo City, Yamagata Prefecture, founded in 1898. It uses natural hard water from the Ohu mountain range and traditional wooden presses to create a clean, smooth sake with minimal impurities. Since 2004, fifth-generation brewer Asanobu Mitobe has also cultivated sake rice himself, embracing the philosophy that “life is play,” managing the process from rice growing to brewing to ensure high-quality ingredients and rich flavor. Core products include the dry Junmai and Inazo Junmai Ginjo, alongside seasonal limited releases like the Junmai Ginjo Usu-Nigori Nama series.
