One of the reasons we started making plum wine was that the plum wine we made at home was much tastier than the plum wine sold on the market. As a latecomer to the market, our policy is to make sake-based plum wine that is truly delicious without being eccentric and orthodox. We hope that you will experience the deliciousness of sake-pasteurized plum wine.
We have experimented not only with the variety and ripeness of the plums, but also with the taste of the sake we use, the type of sugar, the pickling method, the working time, and everything else. To create something excellent, “find what you need and what you lack, and overcome it through repeated trial and error. The repetition of this kind of steady work is what is important” – these words written by Ryu Murakami in his essay have had a great influence on my work. The production of ume-shu is of course different from the brewing of sake in many respects, but it is also interesting in another way.
