“Nichi Nichi Jozo” was founded in Kyoto by Mr. Hidehiko Matsumoto, a brewer born after training as a samurai. We pursue sake brewing that brings out the smooth and deep flavor of the water that falls in the basin of Kyoto, and brew sake that makes your dishes even more delicious. This is a bottle that uses “Tamasakae” from Shiga Prefecture, due to its connection with Tomita Sake Brewery of Shichihonyari.

Tomita Sake Brewery has been a pioneer in initiatives such as pesticide-free and reduced pesticides. This year’s Tamasakae was quite hard, but since it was prepared only once, they made many fine adjustments. The flavor is stronger than expected, so you can enjoy it now.

Of course, Hidehiko’s sake also has the potential for long-term aging, so please enjoy the different flavors depending on the season.

The unique bitterness of Tamasakae is modest, and you can feel the sweetness and umami of cooked rice, making it a light and enjoyable drink.
The alcohol content is also low at 12%.
