Hakutsuru Nishiki is a sister strain of “the king of rice” Yamadanishiki, crossbred between Yamadanishiki and Wataribune rice. It was developed over 10 years by the mega-brewery Hakutsuru. It is luxurious, elegant, flavorful and refined. This is an interesting collaboration between breweries, and showcasing how much Takagi Shuzo enjoys experimenting with different rice types to brew sake.
This medium-sweet Juyondai Banshu Hakutsuru Nishiki Junmai Ginjo is delicious and seductive, offering elegant but opulent notes of white flower, peach, candied cherry and jam. On the palate, it is round, fresh, mellifluous and spicy.
