Hayakawa Shuzo was founded in 1915. The brewery is located at the foot of the Suzuka Mountains, Mie Prefecture. After graduating from the Faculty of Brewing and Fermentation at Tokyo University of Agriculture, Mr. Toshihito Hayakawa studied under Mr. Shoichi Sato, the president and toji of Sakata Shuzo (Yamagata), which brews "Jokigen上喜元," and learned all aspects of sake brewing. Hayakawa Brewery's sake use the "Funashibori (tank pressing)" method to bring out the mildness and gentleness of the sake. They are committed to producing high-quality sake by maximizing the characteristics of each sake rice, and by maintaining the balance of the sake as a whole.
